The majority of us love something sweet, we tend to kick the sugar craving by going with a slice of cake, pastry or something else that’s completely full of sugar and butter, not that I think that’s a bad thing at all, I love cake. But I wanted to experiment with fulfilling that sugar craving with something that may not make you feel as guilty as a big slice of red velvet cake. With our cupboards at work being full of different nuts, I wanted to put them to good use. I came across a recipe from ‘Deliciously Ella’ her ‘ultimate energy bites’ not only sound yummy but they would go down very well in our cafe, where many of our customers like to watch their hips, thighs, face and bums. These energy balls would go down a treat, their full of super foods; almonds, flax seeds, walnuts, raw coco, dates and coconut oil. As we didn’t have all the ingredients in our cupboards that the recipe required, I tweaked it just a little. 
 
The great thing about these little treats, is that they really do taste as good as a chocolate bar, not as good..but very close. The use of raw coco, gives you that lovely chocolate taste but without all the calories. I decided to use a mixture of dark coco and milk coco to add a more depths of flavour. This subtle chocolateyness combined with the range of nuts (use any you have lying around in those cupboards of yours), the creaminess from the caramel and the dates create a sugar kick you didn’t think existed! 
 
Not only do these ultimate little treats taste delicious, they are so simple to make and you can always add a few more nuts or coco if you fancy. Just make sure you have a consistency that can easily be held in a ball, it maybe just a little sticky, but that’s fine. I also tweaked the recipe by rolling the balls in desiccated coconut, very tasty and adds another texture!

Ingredients:
 
  • one cup of dates (soaked and drained)
  • 1/2 tablespoon of milk coco
  • 1/2 table spoon of dark coco
  • 1  tablespoon of coconut oil
  • 2 tablespoons of flax seeds
  • 2 tablespoons of chia seeds
  • 3/4 cup of almonds
  • 3/4 of walnuts and any other nuts you have in your cupboards
  • 1 cup of desiccated coconut 
Method:
 
  • Start by placing the almonds, walnuts, ground flax seed and chia seeds in your food processor. Blend for 1 minute, until the a flour forms and the nuts have crumbled
  • Then add the remaining ingredients, pitting the dates before adding those. Blend for another minute until a stick dough forms
  • Use your hands to roll the mixture into little balls, then roll them in a separate bowl with the desiccated coconut.
  • Place in a bowl and store in the fridge,after around 30 minutes these treats are ready to eat!
